strawberrycharlotte.jpgLeave it to my grandmother’s generation to have a delicious dessert with gelatin. A standby ingredient of the “greatest generation,” gelatin is often forgotten these days. Yet, this one ingredient provides a fantastic texture and appearance for dessert dishes. Strawberry Charlotte Russe is an “oldie but goodie,” for its name is derivative of Russian royalty and French culinary prowess.

With strawberries coming into season here in the Deep South, this Farmer is exploring a few old faithful recipes. A Charlotte Russe is delicious with any in season berry (black, blue or rasp) but especially good with strawberries. Though there are methods of ringing the mousse like dessert with additional lady fingers, tying with ribbons, and presenting in more formal fashions, I simply prefer to mound this delicacy in a pretty serving dish, scoop onto lovely dessert serving pieces, eat and enjoy the very essence of the season. There is something special about using family pieces, and my Mimi’s great Aunt Mamie's china is just the token for a dainty dessert. Though highly elegant, this dessert is severely easy to prepare and it's sure to be a hit with you and yours.

soup matzoballThe change in temperature; going from cold to hot to cold again has wreaked havoc on my family and their health. Me included. Last week, there were two mornings that I dropped the kids off at school, came home, and got right back into bed. Slept for hours, with a puppy on my belly. Regardless of feeling totally crappy, there truly is nothing better than getting back under the covers (at 9:00 a.m.) with a cozy, little Lola close by.

Thank goodness for my freezer. Meal planning, prepping, and stocking the freezer pays off. In my opinion, it’s a wonderful feeling, opening the freezer door and seeing laborious hours spent in the kitchen, put to good use.

Before crawling back into bed, I went to my extra freezer and took out three quarts of chicken stock. I also grabbed 2 organic chicken breasts and set both on a rimmed baking sheet to thaw. After several hours of napping, I had just enough energy to roast the chicken, cut the veggies, and prep the matzoh balls.

For my family, matzo ball soup is one of our favorite comfort meals. It’s a one pot meal that covers all the food groups; protein, grains, vegetables, and fat. Plus, this meal leaves plenty of room for dessert.

summertomatosSummertime is the best of times and the worst of times.

When it's hot and humid, nothing makes me happy except air conditioning. But all that heat is good for the garden and summertime tomatoes benefit from all that sun. Luckily we have neighbors who generously share the beautiful tomatoes that grow in their garden.

A BLT is my favorite way to enjoy tomatoes. Acidic-sweet tomato slices cozy up to crisp, salty bacon, crunchy lettuce leaves and the comfort of bread in the most satisfying of experiences.

When the rain beats against the dining room windows and the temperature hovers in the mid-40s, a wintertime BLT with hot house tomatoes on slices of a good wheat berry bread with a touch of Best Foods mayonnaise and a bowl of hot vegetable soup satisfies in a good way.

Summertime is something else altogether. First off, I don't want all that bread. In summertime, I want light and cool, not heft.

cake almond.honey Slowly, we are all starting to lead a gluten free life. Finding snacks and savories, without gluten is a conscious effort. And, it’s really not that hard. Gluten free pretzels dipped in homemade nutella is one of Levi’s favorites and cut up fruit is now always on the table. I am fortunate to live in sunny California where my local farmer’s markets are filled with ripe melons, crispy apples, and everything else that is in season.

With unexpected guests joining us for dinner, I needed a quick dessert. And using stuff in my pantry and fridge was my only option. A while back, I had bookmarked Anja’s recipe for her Apple Lemon Honey Cake. I had apples, I had lemons, and I had a brand new jar of raw honey. Perfect. Best of all, I didn’t have to drag out my Kitchen Aid Mixer to make it. Even more perfect!

This cake feels dense but it isn’t. Is light, not too sweet, and delicious all on it’s own or with a scoop of ice cream on the side.

“We would have salmon croquettes and biscuits for lunch or finely-chopped roast, drizzled in au jus gravy and bourbon colored syrup and eat the meals with delight. As domestic deity, Mary was unrivaled.” – From my memoirs...

Mrs. Mary made salmon croquettes for lunch for us many times during my childhood. Often during the summer when we were out of school and in her hair, she’d send us to the garden to pick vegetables and then we’d “help” her make lunch.

Her croquettes were more so of a crispy salmon patty, not greasy, and wonderfully delicious. Many times we would have sliced cucumbers and Vidalia’s in vinegar with them or some other fresh veggie medley...okra and tomatoes, skillet corn, or browned squash.

I’ve often tried to recreate hers, and, as with her biscuits, I just don’t hit the mark. I have discovered, though, a modern twist on this classic that is quite divine. My Mimi, a fantastic cook herself, had a hankering for salmon croquettes and I was glad to oblige – wanting to try a twist on croquettes, we began thinking...a dangerous kitchen pastime!
