grapefocacchiaIt would be great if I had the time to make "real" focaccia bread, unfortunately my life is just too crammed with a million other activities at the moment. However, this simplistic version of the classic Italian peasant bread comes together in an instant.

This is wonderful finger food and a great party appetizer. In the oven, the grapes become lightly roasted, soft and juicy. The contrast of the salt and sweet really make this a winner.

Because you are using already prepared pizza dough, it takes no time at all to get this on the serving table. Every Mom's dream!

kingcakeEvery Mardi Gras, I have been wanting to make a King Cake for the kids.  I just never seem to have the extra time.  So when I came across an easy idea to make this happen, I went for it.

The King Cake is a dessert eaten all over the world in different forms and associated with the festivities of Mardi Gras, and it is no where more beloved than New Orleans.

It is normally a sweetened, yeasted bread stuffed with a cinnamon, cream cheese or praline filling and shaped into an oval ring.  It is then topped with white icing and sprinkled with yellow, green and purple sprinkles.  A small, plastic baby is then stuffed inside and whoever finds the trinket is declared the KING!

Anyways, this is the ultimate King Cake cheating recipe.  However, if you find yourself short on time, give this a whirl.  It surely tasted delicious!!

chickenhashEvery Sunday I roast a few chicken breasts (bone in, skin on). It’s easy. Having shredded chicken in the kitchen at all times prevents me from randomly eating empty calories during the week. Plus, having pre-cooked, roasted chicken on hand, gives me lots of inspiration for one pot meals.

Generally, I don’t really like leftovers. With that said, I always make enough food for dinner so M can take lunch to work with him the next day and the kids have something healthy to put in their lunch box. Yet, by the time Thursday rolls around, even though I have “planned” a particular meal for that night (yes, I do meal plan every single week), sometimes it is hard to motivate. Whipping up a meal in less than 2o minutes is sometimes much more desirable than what was supposed to be on the table that night and this leftover hash was created on one of those nights.

Left over roasted potatoes, shredded chicken, half of a red pepper, a few leeks, additional random veggies, and some spices, created one of our new favorites; Chicken-Potato Hash. It is equally delish with or without the poached egg. Eli and I prefered it with the egg, where as Isaac cannot sit next to us when eggs are on the menu. Instead, he added a bit of ketchup. This also makes a wonderful and highly requested Sunday morning breakfast. Sausage works just as well and I have been known to a throw in some left over green beans, roasted carrots (or other roots), and a dollop of goat cheese.

lemonricottapancakesWaking up is hard to do. Really hard. For some, a strong cup of coffee or tea helps. Not for me. I wake up slowly and after being up for at least an hour or two I tackle breakfast. Left to my own devices, I would probably just eat brunch and save the real breakfast food for dinner, but Lee prefers something a bit more traditional.

The big problem with breakfast for me is always--what to have? Savory or sweet? Both are appealing but if I eat something sweet I may not get enough protein and as a result I'm ravenous barely an hour or two later. Nutritionists recommend a "balanced" breakfast meaning both carbohydrates and protein. Easy to do with eggs or cheese but harder to do with sweets like pancakes. Having sausage or bacon on the side is another way to go but probably not the best choice everyday. French toast or crepes are both sweet and have protein but I'm always looking for more protein-rich sweet options.

Ricotta pancakes are a perfect way to go. The ricotta gives you plenty of protein, they only have a couple of tablespoons of flour so you're not filling up on carbohydrates and best of all they are really delicious and cook up in a flash. Of course, serving them with bacon is up to you...

ImageSo this isn't just broccoli with Cheetos crushed over the top, that would be silly. This is broccoli with a garnish of Cheetos served on top of a rich, garlic-shallot infused sauce made from Gouda and Parmesan cheeses. Perfection.

Now, when I placed this on the dinner table, my kids looked at me like I was half-cracked or had lost my mind. But at the same time they were cheering because Cheetos were going to be a part of dinner. Score.

Apparently this dish is all the rage at Park Avenue Winter, a New York City restaurant that serves this dish up as a side dish on their regular menu. The Cheetos-loving chef, Craig Koketsu, claims this dish sells better than the French fries on the menu. I believe him.

The sauce has depth and complexity and the Cheetos change up the texture in a nice way. It just rocks.

Everyone ate their broccoli last night. First time ever.
