
Maine Blueberry Waffles
2 cups whole wheat pastry flour (or unbleached white flour)
2 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Maine blueberries (about a pint)
2 tablespoons real maple syrup
4 eggs separated, beat whites until stiff
1 1/2 cups milk
1 cup plain yogurt
8 tablespoons melted butter or oil or a combination of the two
Blend together maple syrup, beaten egg yolks, milk, yogurt and butter/oil. In a separate bowl sift together dry ingredients. Slowly add dry mixture to wet, combining as you go. Blend just until everything is combined, then stop! (This is the secret to light and yummy waffles.)
Lastly, fold in beaten egg whites and blueberries. Make waffles according to your waffle iron instructions. Serve with real maple syrup and a dollop of plain yogurt. Makes 15 or so.
