Print Email

A recipe for those of us who just can't get enough blue cheese.

pounds red potatoes, cut into 2-inch chunks
2 teaspoons minced garlic
1/2 cup crumbled blue cheese
1/3 cup 2% milk
1 tablespoon butter
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain. Place potato mixture and remaining ingredients in a large bowl. Mash to desired consistency. Add more milk, cheese or seasonings to taste.
