Black Bean and Mango Salad

1 1/2 cups chopped mango (about 1/2 inch dice)
1 package Trader Joe’s Thai Lime Rice
1 (15oz) can Trader Joe’s Cuban Black Beans, rinsed and drained
3 tablespoons chopped cilantro
1 cup pico de gallo
2 tablespoons lime juice
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cumin

Cook rice according to directions. Add to a saucepan with the beans and warm. Turn off heat and add the rest of the ingredients and mix gently. Serve immediately.

If you don't have a Trader's Joe's available, you can use any other type of canned black beans. For the rice use long grain white rice and add an additional tablespoon of lime juice to it before mixing in the rest of the ingredients.
