
A Winter California Salad
You don’t have to live in California to make this salad! Because there are clementines and avocados everywhere. It’s our new favorite salad. It’s pretty. It’s good for you. It’s healthy. And it’s festive!
Half of head of romaine lettuce
2 avocados
3 Clementines
A yellow heirloom tomato (totally optional and if you can’t find yellow tomatoes, don’t substitute with red ones, just omit). You can use baby yellow tomatoes.
5 fresh radishes
2 or 3 carrots
A handful of the thinnest sliced almonds
Chop lettuce into pieces and toss into salad bowl. Peel and slice avocados and add to romaine. Peel clementines and divide into individual sections and add to romaine mixture. Slice radishes and carrots into rounds and add to salad. Chop tomato, (if you can find one), and add it, too.) Toss a handful of almonds around the top of the salad. Add dressing and toss.
Serve with your favorite vinaigrette. This recipe works with balsamic, sherry, or pomegranate!
