
Smoked Salmon Quiche
1 baked 9-inch pie shell
1/2 lb. smoked salmon
grated rind of 1 lemon
2 tablespoon chopped parsley
1/4 cup chopped onion
3 eggs, lightly beaten
3/4 cup half and half
3/4 cup heavy cream
1 tablespoon flour
pepper to taste
Line pie shell with smoked salmon. Sprinkle with lemon rind, chopped parsley and chopped onion. Combine eggs, heavy cream, half and half, flour and pepper; pour over salmon. Do not salt! Bake in top third of oven at 375 degrees for 40 to 45 minutes.
