4 cups water
2 cups coarsely chopped peaches
3/4 cup sugar
1 cup fresh lemon juice (about 6 large lemons)
4 cups ice
1 peach cut into 8 wedges
Combine water, chopped peaches and sugar in a saucepan over medium-high heat. Bring to a boil; reduce heat and simmer 3 minutes.
Place peach mixture in a blender and let it stand for 20 minutes to cool with the lid off. Remove center piece of blender lid and place a clean towel over opening in blender lid. Blend until smooth. Pour into a large pitcher and refrigerate for at least four hours.
Press peach mixture through a sieve over a bowl, reserving liquid and discarding any solids. Stir in lemon juice. Serve over ice with a peach wedge.
