healthybreadI always crave banana bread -- moist, tender, nut studded slabs with plenty of butter on top. I don't always crave the calories that come with it. That's why I have been experimenting with a creating a healthier, reduced fat banana bread that will keep both tummy and my hips happy. I have succeeded.

This banana bread is low in fat and calories yet high in fiber, protein, and heart-healthy omega-3 fatty acids. Instead of fats such as butter or oil, I used healthier egg whites, low-fat buttermilk, non-fat yogurt, and orange juice. Instead of just plain white flour, I used protein and fiber-rich oats and whole wheat flour and omega-3-rich flax seed and walnuts.

The cherries are a seasonal surprise that add sweet juiciness to eat bite. Of course, you could substitute other fresh fruit such as apples or mangoes or dried fruit such as raisins or apricots. Oh, and don't worry. It tastes great.

wintersaladNow that the fall has given way to colder weather, enjoying winter’s chill outdoors requires a well-insulated coat and good gloves. Indoors, the kitchen fights back the cold with a hot oven and good food ready to eat. The best winter food comforts our spirits and nourishes our bodies. Nothing does that better than a roasted vegetable salad.

In summer, a ripe tomato salad mixed with peppery arugula leaves and bits of salty, creamy Bulgarian feta can be a meal in and of itself. When the weather cools and a weakening sun denies farmers the heat they need to grow nature’s leafy wonders, we still hunger for salads but now it’s time to look to hearty greens and root vegetables to satisfy that craving.

In winter, walking through the local supermarket’s fresh produce section, it’s easy to believe we live in a one-season world. Vegetables and fruit that require summer’s heat are stacked high in the bins. But one taste and it’s easy to tell, these delectables have been grown out of season or traveled long distances to reach our tables.

Root vegetables like celery root, beets, turnips and potatoes grow well in the colder months. When roasted, their starches convert into sugar, coaxing the best out of these subterranean gems.

preservedlemonsMy one favorite thing about the winter season is citrus fruit. When I have a good lemon or orange in hand, I almost forget about the mountains of snow and the blistery weather. I always seek out unusual citrus fruits, from Meyer lemons to blood oranges. But the one citrus fruit I use most is the standard lemon. The ones available in the supermarket are typically the Eureka variety. I use those juicy yellow orbs in practically every recipe. Salad dressings, baked goods, and stews all benefit from a little lemon, be it the juice or zest. The aroma and flavor of lemons are what make them so special and revered in many cuisines.

Luckily we can get lemons year-round in the supermarket, but there are also ways to preserve them. Many cultures preserve lemons when they are in season for later use during the rest of the year. North African cuisine, particularly Moroccan, and even Indian and Southeast Asian cuisines utilize preserved lemons in many savory recipes. They are added to the famous Moroccan tagines. They are also great in standard stews, braises, and roasts. Just as with the fresh citrus fruit, the possibilities are limitless with preserved lemons.

GALETTE 550pxI get downright giddy when I think of galettes. Rustic, free-formed, and shockingly beautiful, they are everything I want in a baked good and then some.

Simplicity is rewarded tenfold in my opinion, and if there’s one in a bakery case or counter chances are I will order it, no matter the ingredients.

Because I love them that much. I had to share the recipe for this savory pie comes from the Food Network Kitchens. This is a group I know very well and every time we photograph their recipes I know I’m in for a creative treat that works. They always work. And they are always delicious, so thanks, FNK!

What can I say about this galette? It’s gorgeous, both in appearance and flavor. It makes me feel like I am a million miles away in a cafe, and pairing a slice of this with a glass of rosé or sancerre might possibly make you the happiest person on the planet. Did I mention how gorgeous it is?

rutabaga.jpgMe and my big ideas. Take rutabagas. I thought it would be just nifty to plant a row of these, late in the season, to use in our winter kitchen. (You can keep them right in the soil—how handy!) They’d be exclusively for us, not for the farm stand. Like the onions. Yes, but onions are a tad more versatile than rutabagas, you might point out. Duh.

There are only so many rutabagas one can eat. It’s not even November and Roy is already looking a little rutabaga-weary. And this despite the fact that miraculously, Roy, who is not a huge veggie lover, is not turnip-averse. (Rutabagas are basically big, purple-skinned, yellow-fleshed turnips.)

I guess I got all rutabaga-smug because I figured I knew a bunch of tasty ways to cook them. This week, in fact, I slipped some into a potato gratin, and that was a definite hit. (Couldn’t have had anything to do with the cream and cheese.) And one of my favorite techniques—slowly caramelizing root vegetables in a crowded pan—works wonders on rutabagas, so I’ve been using this trick frequently. And Fall Veggie Minestrone is another great destination for rutabagas.
