rhubarbcrisp.jpgI never remember the difference between a crisp, a crumble, and a cobbler (not to mention brown bettys, slumps, or grunts).

Crisps, crumbles, and cobblers are all low-maintenance desserts made with seasonal fruits or berries that have the flavor of pie without the work of actually making one.

A crisp is made by mixing fruit of your choice with sugar and spices then topping it with a crisp mix made of butter and sugar and a binding agent such as flour or oatmeal.

A crumble is similar to a crisp. It's made by mixing fruit with sugar and spices and topping it with a streusel, a mixture of butter, sugar, flour, and nuts.

Cobblers take longer to make than crisps and crumbles because they have a dough-like crust. Some cobblers are made with enclosed crusts while others, like my Fresh Apricot and Cherry Cobbler with Buttermilk Biscuit Crust, are made with a biscuit topping.

Image What's this I see? Kids fighting over vegetables? Yes, it's true.

This past Saturday at the Little Italy Mercato in San Diego, two little boys were tussling over cucumbers. Well, not just any cucumbers, Armenian cucumbers, otherwise known as "snake cucumbers" and "snake melons."

"I wanted that one!" said the freckled blonde, stomping his right foot on the ground.

"Well, it's mine!" said the dark-haired one, fiercely, as he handed a curly, striped cucumber as tall as he was to his mother and asked: "Can I have this?"

I sighed. Ahhh! There is nothing so touching as seeing children fight over fresh farmers' market vegetables.

If you've seen an Armenian cucumber, then you understand why they're so alluring.  Though a variety of melon, an Armenian cucumber looks and tastes like a regular cucumber, but can grown up to three feet long!

coconuticecreamHomemade ice cream is a great tradition for the Fourth of July. Undoubtedly it hits the spot on a hot summer day. And we all know store bought ice cream is nothing compared to homemade.

When I was sixteen I discovered my love of coconut frozen yogurt. Penguin’s Frozen Yogurt moved into my town and were looking for a bunch of teenagers to hire. It was a chain that was growing by leaps and bounds due to their popularity. After three…long…interviews I was hired. Can you believe three interviews for a job at a frozen yogurt place? Sheesh.

Anyway, coconut was a flavor we had maybe once a month. I loved it and it was all I would eat for the few days we had it. Since then I always seek out coconut ice cream…I never see it anywhere as coconut frozen yogurt…which is okay by me! I prefer ice cream.

So this ice cream…wow. Wow. Wow. It really is the best and there are so many possibilities of toppings, it make me dizzy just thinking about all of them.

shrimparugula.jpgThe best thing about this time of year is the abundance of fresh ingredients available at the Farmer's Markets and roadside farm stands.  Freshly harvested arugula is widely available right now, which makes me almost giddy, I love it's peppery flavor.

This dinner or lunch comes together in minutes which works perfectly for my schedule at the moment.  It's a very summery dish with little to no effort going into making it.  Not to mention it's very light on the calories.

Enjoy it with a refreshing glass of white wine while sitting on the patio enjoying family and friends.

zucchinisticks.jpgZucchini is the most versatile vegetable. On it’s own it is so-so. There is so much you can do with it. I like to pair it with grilled onions, roasted tomatoes, left over brown rice and some Parmesan cheese and bake it for an easy week night side dish.

It is great grilled; pour a little olive oil and balsamic on it with a little salt and pepper, grill it until it is slightly soft, serve it up with a yummy rib eye, mmmm. It is great in muffins and tea breads.

Yet, it is especially delicious breaded and baked. This is a great way to get the kids to eat some veggies. These are easy and delicious. No frying, they are baked and they are a perfect with almost anything.
