And I’d say, “Yech.”Or at least I used to. I’m not sure when the exact transition from terrible to tantilizing took place, but I can assure you it’s a food miracle. As a child, if any part of a raw tomato touched my plate, I couldn’t eat the item on it. The pulpy, soft texture, the runny pink juice – don’t even get me started about the seeds – was all like garlic to a vampire. The only thing that was (and still is) worse – the pickle. (How could they do that to the cool deliciousness of the cucumber?) But, I digress. You seriously could have tortured me by forcing me to take a bite out of one. I would have given up every secret I had before I ever put one in my mouth.
The tomato was my friend as long as it was cooked. Pizza, spaghetti, even salsa (I know it’s raw, but spices count for a lot) was enjoyed with pleasure. Gradually as I made my way into the world I became more embarrassed by my food quirks and stopped picking them out of things. If I could order something without the tomato, say a sandwich, I would. Though I didn’t like it I hated wasting a “perfectly good” slice I wasn’t going to eat. However, as I became more and more addicted to big, bountiful salads – inevitable for anyone who moves to California where there’s fresh produce year-round – I found leaving the tomato out was a much harder request.

Summer Vegetable Stir-Fry
With summer drawing to a close, I'm still not ready to say goodbye. My garden, though less productive, has a lot of vegetables that are still ripening. But, alas, the cooler weather and shorter days will bring an end to summer's bounty. But with all the beautiful late summer produce that's currently available at farmers' markets, like squash, peppers, tomatoes, and more, there's a lot of summery cooking that can still be done.
Take the opportunity to make a tomato sauce, a soup, saute or stir-fry. I love stir-frying because it's such a fun and easy method for cooking up a meal quickly. Plus you can pack it with vegetables. For this summer stir-fry, I use zucchini, bell peppers, and oyster mushrooms. And one of my favorite herbs, Thai basil, makes an aromatic and flavorful addition. What could be a better dish for using up summer vegetables than this?
With Thai flavors, much like Pad Thai, I use sweet tamarind paste and savory fish sauce to flavor the dish. Soy sauce, garlic, and ginger round out the flavor profile. It's all served over rice noodles. But there's one thing to keep in mind. The secret to a well-made stir-fry is cooking the dish in smaller portions so that everything stays crisp instead of steaming under the weight of a full wok of vegetables. Take a few minutes to toss together this healthy and colorful dish. You won't be let down by these summer flavors.
BBQ Beef Sandwiches
Brisket is such a versatile meat. I like it best, slow cooked. I make it in the winter time, slow roasted with red wine, orange marmalade, orange zest, garlic and dried herbs. Yet, in the summer and fall months I like to make it BBQ style and serve it on delicious french bread with a side of Asian Cole Slaw.
The recipe calls for jarred BBQ sauce. Yet over the past few years I have really become even more conscious of what I am feeding my family. I have never bought a jarred salad dressing (even in college). Two reasons why: 1) they taste lousy and 2) there are way too many things in the ingredients list that I can’t pronounce.
And if I can’t pronounce it, I am not going to eat it. I have come to the conclusion that BBQ sauce is no different. I have decided to make my own. I make a big batch of it and use it for grilling, marinating, roasting and my kids like to dip their oven baked chicken nuggets in it.
Sweet or Savory, Blueberry Topping Goes Both Ways
Blueberries just might be my favorite summer berry. When I was growing up, I enjoyed the blueberry pies my grandma made. I've never been able to recreate that delicious pie. And, for that reason, I come up with all sorts of ways, other than in pie, to enjoy the plump blueberries of summer.
I think it was four summers ago, at about this time, that I went on my first camping/canoe trip at Lake of the Woods. A friend, who was also on the trip, sent me a recipe for a blueberry relish sometime before we were scheduled to take off. I made the relish for her and brought it to Laketrails Base Camp on Oak Island in Lake of the Woods in the Northwest Angle of Minnesota, our starting point. Our fellow paddlers enjoyed the savory blueberry topping with goat cheese on toasted slices of baguette as a start to our meal the night before the big adventure trip under a full moon. There were times on our week-long adventure that we wished we would have had more of that snack.
A Summer Setting
With the bounty of produce at hand, summer is an ideal time to bring the garden indoors and enjoy the benefits of nature’s bounty at your table…especially in the air conditioning!
My inspirations often stem from interesting places and the springboard for this tablescape was a green plumb. The vibrant green yet soft and strong simultaneously led me to think of the different shades of greens that abound. Table linens depicting exotic summer flora and fruit and napkins in an ochre chartreuse proved the perfect pairs for the green inspired tableau.
Though the linens boast gorgeous colors in vivid rich hues, a simple gathered arrangement of garden greenery and faint colored blossoms was ideal for the centerpiece. Using a silver plateau inverted to hold oasis, I mounded and layered leaves of variegated hydrangea, acuba, hosta, fern fronds, and pale blue lace cap and ‘Ayesha’ hydrangeas. The tapestry of greens and soft florets were grounded with creams of ‘Annabelle’ hydrangea that carried the cream theme into the cream glazed earthen ware from Provvista Desgins.
As for other elements of the setting, the garden inspired natural theme was continued with hydrangea leaf chargers, arrayed in concentric rings around and under the plates. Since the wild green plums were the inspiration for the tablescape, bowls brimming with the tart fruits served as perfect take home gifts for guests and place settings.
