grilled-shrimp-tacos-with-pineapple-jalapeno-salsa-close-upI am obsessed with shrimp tacos right now! We are eating them at least twice a week and even that isn't enough for me. They are such an easy meal to put together. Sometimes they are more fancy than others and other times it's just the tortilla and shrimp. 

Shrimp tacos always taste better (to me anyways) with a sweet-heat factor. For this recipe I chose pineapple and jalapeno made into a simple salsa. It makes the taco!! I think fresh corn would have been amazing in there as well. However, I did want a little complexity so I grilled the pineapple to give it that "burnt sugar" flavor, which is always amazing in any dish.

Fresh pineapples can be daunting to slice. I know many people shy away from giving it a try. But friends there is no reason to do that! This OXO Pineapple Slicer is an awesome tool that really works. I always place my pineapple in a bowl, like you see here, to catch all the flavorful juice. It slices beautifully! And the hard core remains in the pineapple. Get one if you can, your summer might not be the same without it. And if you are having a summer luau, don't even think twice about not having one of these on hand.

miniquicheIn the past I would make lots of mini quiches and freeze them for snack time or unexpected guests. These little baked egg cups have replaced those cute little quiches, no crust needed, thus no gluten. I prefer them purely vegetarian. Using up veggies from the previous nights meal (roasted asparagus, potatoes, broccoli, sauteed spinach, etc.) is right in line with my “no waste” philosophy. These are just another way to “re-purpose” staples and ingredients I already have on hand.

Generally, I like my eggs served with homemade salsa or onion marmalade on the side. Not only does it add so much more flavor, but it brings a bit of color to the plate. And think about the possibilities for your next brunch. Make these in advance, in a variety of flavor combos, leaving more room for Bloody Mary’s and conversation.

My favorite combo, so far, is this one or one made with blanced asparagus, goat cheese, and leeks. Make a double recipe. Keep them in the fridge for up to four days…that is, if they last that long.

Noble-Pig-Guilt-Free-Chocolate-Banana-MuffinsWhat is a guilt-free muffin anyway? I guess that means something different to everyone. Let's face it, muffins do not usually equal health food, but there are ways to make them better for you. A healthier muffin to me means, a little protein and fiber, with a lot less cholesterol causing ingredients and lower in calories.

I am literally shocked at how good this muffin tastes with just a few little ingredient changes. There is no oil or butter in these muffins! And they are satisfying and sweet; dense, but in a good way. They are also completely moist, even after four days. 

I used my tips and tricks for the Best Banana Nut Muffin and applied them to this recipe. The two-cup method does work when it comes to creating a banana muffin you will love.

Consider it the perfect gateway snack in between meals, with a cup of black coffee of course.

peanutbutterpopcorn001I am a popcorn monster. During the cold winter months in northern Minnesota when it gets dark early, there’s nothing like curling up in front of the fire with a bowl of popcorn. I don’t eat the popcorn from a bag that is prepared in the microwave — too much sodium. The kind I eat is prepared the old-fashioned way in a pot on the stove, then drizzled with just the right amount of melted butter and sprinkled with salt. Napkins are a must.

Years ago, I had a generous neighbor who would make batches of Honey Peanut Butter Popcorn, always sharing a big bowl of it with us. It would usually be during the summer time. We’d sit out on my front porch munching and visiting, and suddenly, the bowl would be empty. The snack that my neighbor had intended for my family was gone.

I hadn’t thought of that sweet, chewy treat in such a long time. But the other night, as I was sitting on the couch with my big bowl of buttered popcorn, watching The Biggest Loser, that popcorn treat popped right into my mind.

chocolate-strawberry-shortcake-014When I pulled out the pocket folder filled with recipes I’ve gathered from cooking classes I’ve attended over the years, I was surprised to see that some of the recipes dated back to 1984. That was the year I started taking classes from Andrea Halgrimson in her cozy little kitchen in Fargo. I had two young sons at the time. Gathering with a small group of food-loving people in Andrea’s kitchen was always a special night out for me.

I flipped through my stash of recipes to find Chocolate Strawberry Shortcake. On a May evening in 1984, Halgrimson mixed up a biscuit-like chocolate dough that she rolled out and pressed into large round cake pans. The two chocolate shortcake layers were packed with a filling of whipped cream and fresh strawberries.

That was the night I got over my fear of unflavored gelatin. Halgrimson showed how easy it is to dissolve a little gelatin in water in a glass measuring cup. She placed the measuring cup in a small amount of water in a saucepan over low heat. As the water in the saucepan warmed up, the granulated gelatin dissolved in the water in the cup. Easy.
