bestburgers.jpgThere is undeniable pleasure in a plain beef burger — juicy, tender, and well browned over a backyard grill — but there’s even more in a jazzed-up one. If you begin with pork, lamb or beef that you buy yourself and grind at home, and continue by adding seasonings aggressively, you’re on your way to a summer full of great “burgers” which are, in essence, sausages in burger form.

In fact, I wondered while making (and eating) my first pork burger of the grilling season: Why would anyone make a plain burger? Why would you begin with supermarket ground beef — whose quality is highly questionable and whose flavor is usually disappointing, if not depressing — and then cook it without much seasoning beyond a few crystals of salt? Ketchup, after all, does not fix everything. Even adding mustard, pickles and so on, right down to mayonnaise, doesn’t give you good-tasting meat.

cakeknife.jpgI had the world's strangest roommate. We were best friends in college and she seemed like  the perfect person to live with. She was a great listener, she was obsessed with Clive Owen and her purse was always stocked with remedies to just about anything – creams, lotions, pills, even powders. Everything was going great, until one day, it just wasn't. Her once mild room-dancing had started to rival the sound of a herd of elephants, her attempts to match our outfits had turned from sort of cute to sort of single-white-female (except that she's five feet tall and Asian) and she had invited her new best friend to come live with us for a month, without consulting me. She finally decided to move out, taking her friend with her. And they went amicably enough.

I came home with my friend Amanda that night to cook dinner, so excited to have the place to ourselves. We skipped around the apartment, lay down on the floor of the now empty second room and made our way into the kitchen to create a culinary masterpiece to celebrate our freedom. That's when we found out that she'd decided to take all of our utensils with her. Every last one, except . . . my dainty, little, silver cake knife.

mattbites_on_grilling.jpgThis weekend all over the country barbecue grills, Webers, hibachis and iron smokers will come alive with heat, delivering offerings of grilled fare that satisfy our most primal urges.

And while I’m no expert I do know my way around a grill. The good old Texas boy in me always surfaces the minute spring and summer roll around and before you know it I’m ignoring the oven and spending every night cooking al fresco.

Over the years I’ve learned some good lessons (blanching ahead saves time) and some bad lessons (keep an extinguisher handy or else) but there’s always room for improvement. Below are a few things I’ve learned over the years:

1. Arm hair, while serving a protective biological purpose 10,000 years ago, isn’t entirely necessary. One can live a relatively healthy life without it. Eyebrows are an entirely different matter.

picklesgiftsThis is a recipe “re-do” of a long time favorite that’s now a smart weapon in my war against weight…and it’s not only skinny-fied, it’s simplified: Cucumber and Pepper Pickles with Whole Spices.

The original recipe that I made for years had all the ingredients here, but also called for a cup of white sugar..and after making it both ways, I promise, that extra sugar is not missed!

And, since this version isn’t meant for shelving, but for storing and curing in the fridge, the step of cooking on the stove, sterilizing jars and sealing is avoided entirely…saving time, effort  and clean-up!

But, I have to warn you, plan ahead! Though the pickles take just 15 minutes to make, you need to wait at least a day or two before you eat them..they just get better and better.

As a stand alone snack, on a veggie, turkey or bison burger, on top of fish, on a skinny crostini, or on a grilled shrimp or chicken taco, these little jewels are a great way to add flavor and texture to loads of dishes without adding any extra calories!
