creamybeetsoupBeets are like paint bombs. Deliciously sweet, red, flavored paint bombs, so intensely colored they stain your fingers, bleed into the sink, tint the cutting board, you name it. When cooked, they aren't so much red as deep magenta. When mixed with sour cream they turn paler shades of magenta to pink. The color, like the flavor is either something you love or you hate.

Beets get a bad rap from the low carb police, but they are actually quite healthy, filled with antioxidants, low in calories, they have significant amounts of fiber, folate, manganese and potassium. I know some people find beets too "earthy" tasting, but both Lee and I love 'em. Especially in beet soup.

There are an unbelievable number of recipes for beet soup. It's commonly served all over Eastern Europe. There are versions that are cold, hot, vegetarian, with meat, chunky, smooth, with tons of vegetables, with no other vegetables.

Lately I've been experimenting with "less is more". I've tried stripping down various recipes to the barest of basics to see if I could coax the ingredients to shine through. This is one of those recipes. In my experiment to get to the essence of the beet, I developed a recipe that has little more than beets in it at all. A pinch or two of sugar perks up the flavor and the broth and sour cream add body and richness.

pumpkinpasta.jpgPasta seems to be my go-to when I’m short on meal-preparation time. Not only does it cook in just minutes, but it pairs nicely with a variety of vegetables and sauces. Last week I made a sauce of penne, pumpkin and Parmesan.

When I came upon a recipe for pasta with a creamy pumpkin sauce in "The Ski House Cookbook,” by Tina Anderson and Sarah Pinneo, I was reminded of the delicately flavored butternut squash-filled ravioli with a sage-brown butter sauce that I had several years ago at I Nonni, an Italian restaurant in the Twin Cities.

That recipe in "The Ski House Cookbook: Warm Winter Dishes for Cold Weather Fun" inspired Penne with Creamy Pumpkin Sauce with flavors reminiscent of the butternut-squash-filled ravioli I swooned over years ago. I’m not a huge fan of sage, but when the flavor is infused into the dish as whole fresh leaves of the herb saute with some onion and then simmer in white wine, it becomes a whisper that is just loud enough to detect, but not overbearing. For me, the slight essence of sage in the sauce is just right.

porkpearsPork, pears and cider are a very natural combination, one I love.  This recipe uses "hard" cider (with alcohol) because of its crispness and acidity.  Never had hard cider?  Look for it wherever beer is sold, it might be your new favorite adult beverage. 

It's very, very good and can be purchased year round.  Non-alcoholic apple cider works great too (not the Treetop or Mott's brand...real, fresh apple cider, which is easily found this time of year).

Anyway, this meal is pretty tasty.  The pork tenderloin stays juicy and the pears are pretty incredible too.  Paired with the easy to make wild rice, this meal is always well received at my home with thumbs up from the husband and my oldest son.  My youngest had spaghetti, he will come around one day.

This meal is also company worthy, it's very satisfying and looks and smells incredible while cooking.

Image The slight chill in the air, longer nights, and gray skies are all telltale signs that fall is finally here. As soon as the season turns, I put on my sweater and slippers, and gather my recipes for comfort food. Dishes that warm me up and make me feel right at home are on the menu now. One of my favorites around this time of year is a bowl of fluffy meatballs. Seared first and simmered in sauce, then served atop spaghetti, it's the classic Italian-American comfort dish. But there's always room for a twist on tradition.

This is my modern—but no less comforting—take on spaghetti and meatballs. My recipe removes almost all the carbohydrates by replacing the pasta with spaghetti squash. Simply roasting the winter squash results in tender flesh that can easily be removed with the help of a fork to form thin pasta-like strands. The slightly sweet flavor and tender bite of the squash "pasta" makes it a wonderful base for this chicken meatballs recipe. Plus you can have dinner ready in 45 minutes, the time it takes to roast the squash, make the meatballs, and the quick marinara sauce.

arugulasoupThis past summer I've grown more arugula than I've known what to do with. This fall the arugula has been looking better than I ever expected. Lately I've been coming up with ways to use it all before the frost comes. But there's only so much raw arugula one can eat. So I've started cooking with it, making sautés and even soup. Most people would think that arugula is not for cooking, but in fact many European recipes use arugula. In Italy, arugula is enjoyed in pasta dishes and on pizzas. It can also be made into a very flavorful pesto that can be used in pasta or spread on sandwiches. There's a lot more to arugula than salad.

This soup features the pungent and peppery flavor of arugula. A rind of Parmesan cooked into the soup adds salty flavor. The mascarpone cheese stirred in toward the end enrichens the texture of the soup. Since arugula has a tendency to become stringy when cooked, the soup is best puréed until silky smooth. Serve the soup with grated Parmesan and a drizzle of fruity olive oil to complement the flavor of the leafy green. It's great enjoyed as an appetizer soup or even a simple dinner when paired with crusty bread. There's no better time to grow arugula and enjoy this soup than the chilly months of autumn.
