Eggplant is a delicious and versatile fruit. Yes, eggplant, a member of the nightshade family with tomatoes and potatoes, is technically a berry. There are several different varieties of eggplant, some long, narrow and pale purple, some small, white and egg-shaped (do ya think that’s where the name came from?), some yellow, some striped and of course there is the large purpley-black globes that are the most common. I grew two varieties of eggplant this year, and while successful, the plants did not produce enough fruit to keep up with my appetite.
Eggplant is at it’s peak right now. I often pick up the big eggplants at the farmers’ market. I like to grill or broil eggplants slices and have them on hand for salads and sandwiches. I always salt, rinse and dry the slices before cooking; the salting process alters the surface—it doesn’t soak up olive oil.

Apple and Banana Oatmeal Cake
Years ago I made an oatmeal cake that was moist, dense and delicious with a thick layer of cream cheese frosting slathered over the top. When we had out-of-town friends staying with us last week, I thought of that cake that I haven’t made in years when I served baked oatmeal for breakfast one morning.
I flipped through my recipe file and found the cake recipe that I’d clipped from a newspaper many years ago. I added a seasonal touch to the cake with the addition of chopped, locally grown apples. Since I had a ripe banana in the freezer, I stirred that into the batter, too. A bit of cinnamon added to the cream cheese frosting turned the cake into an autumn treat.
Oatmeal, tart apples, cinnamon and banana paired with cream cheese — can’t get much better — unless you add some toasted chopped pecans. I shared the cake with others and discovered that a short length of cinnamon stick poked into each piece of cake worked well as a support for plastic wrap, preventing the plastic from sticking to the frosting and ruining its attractiveness. Once you taste this cake, you may choose not to share.
Creamy-As-You-Like Beet Soup
Beets are like paint bombs. Deliciously sweet, red, flavored paint bombs, so intensely colored they stain your fingers, bleed into the sink, tint the cutting board, you name it. When cooked, they aren't so much red as deep magenta. When mixed with sour cream they turn paler shades of magenta to pink. The color, like the flavor is either something you love or you hate.
Beets get a bad rap from the low carb police, but they are actually quite healthy, filled with antioxidants, low in calories, they have significant amounts of fiber, folate, manganese and potassium. I know some people find beets too "earthy" tasting, but both Lee and I love 'em. Especially in beet soup.
There are an unbelievable number of recipes for beet soup. It's commonly served all over Eastern Europe. There are versions that are cold, hot, vegetarian, with meat, chunky, smooth, with tons of vegetables, with no other vegetables.
Lately I've been experimenting with "less is more". I've tried stripping down various recipes to the barest of basics to see if I could coax the ingredients to shine through. This is one of those recipes. In my experiment to get to the essence of the beet, I developed a recipe that has little more than beets in it at all. A pinch or two of sugar perks up the flavor and the broth and sour cream add body and richness.
Got Vegetables? Make Soup
It can be a challenge cooking for two. When I made a big batch of Baked Garden Vegetable Stack the other day, I had a lot of tender vegetables left over. I turned them into creamy soup in 30 minutes.
The thin slices of potatoes and tender ribbons of cabbage seemed to demand caraway, that distinctly flavored seed typically found in rye bread. I used to love ladling my mom’s sauerkraut dotted with caraway seeds over creamy chunks of boiled potatoes.
I started the soup by sauteing chopped onions and caraway seeds in hot oil. I tried a bit of the Butter Olive Oil I bought at Oh! Olive, a cute little shop in the Lincoln Park neighborhood of Chicago. The oil is organic with natural butter flavor, but is dairy-free and contains no animal products. I’ve discovered it’s perfect for popping corn, or drizzling over a bowl of hot popped corn. Anyway, when the onions began to turn golden brown, I dumped in all my leftover vegetables (I had quite a bit — only two of us ate a meal from that big pan of veggies), poured in a few cups of vegetable broth and let it all simmer together for about 20 minutes.
A Salad of Unusual Qualities
Sometimes lettuce is just not good enough. With its peppery spiciness, arugula has a refreshing bite. In Southern California, even though it gets cold in the Winter, arugula thrives in the year-round sunshine, so we're able to buy fat bunches any time of the year for $1.00/bunch.
Persimmons and pomegranates are more seasonal. When they're all available, our favorite salad is a simple combination of all three. <Suzanne Goin created a complex salad with all these ingredients. I used her recipe as a starting point, choosing to simplify the ingredients and directions.
The combination of tastes is near perfect: peppery arugula, sweet persimmon, tart pomegranate seeds, and crunchy hazelnuts, all held together by the emulsion of olive oil and reduced balsamic vinegar.
