Figure one serving a person, which is half a squash.
Wash the squash but don’t peel. Cut each in half and remove the seeds carefully with a spoon and the strains of pulp that come with the seeds.
Liberally drop a few butter pats onto each and sprinkle with a tiny bit of ginger.
Place squash halves, cut-side up, in a shallow glass pan in an inch of warm water and bake at 350ºF for an hour. Baste at least once with a spoon, drizzling the butter around the top of the squash, while cooking.
