Candied Sweet Potatoes

8 tablespoons unsalted butter
6 medium sweet potatoes (about 4 lbs.), peeled and cut into 1-inch pieces
1 cup packed brown sugar, light or dark to taste
1/2 cup water
Salt and ground black pepper

Melt butter in a large Dutch oven over medium-high heat. Add the sweet potatoes, sugar, water, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a simmer, cover and reduce the heat to medium-low. Cook, stirring occasionally until the sweet potatoes are tender, about 45-55 minutes.

Uncover and then increase the heat to medium-high. Cook for 10 minutes or until the sauce has reduced to a glaze. 

Salt and pepper to taste before serving.
