Here is a side dish that's a stealth method of getting spinach into reluctant people.
1 tsp. butter
1 clove garlic
1¾ c. water
¾ c. uncooked orzo (rice shaped pasta, also known as ......pastina!)
1 c. tightly packed chopped fresh spinach
2 T. grated Parmesan cheese
1 T. pine nuts, toasted
Melt butter in a medium saucepan over medium heat. Add garlic, and saute until soft but NOT brown. Add 1¾ c. water, orzo and salt and bring it to a boil. Reduce the heat to medium low and cook it according to the package directions, or until all the liquid is absorbed. Stir in the spinach and remaining ingredients.
You may notice the measurements are a bit stingy. This comes from Cooking Light Magazine, and they have the balls to call for margarine among other transgressions. It yields two servings .....naturally.
