Bacon-Wrapped Roasted Duck

1 tablespoon minced garlic
1/4 cup diced celery
1 egg
1/4 cup finely chopped onion
3 cups dried, cubed plain stuffing mix
1/2 - 1 cup water
1/4 cup melted butter
1 teaspoon dried sage
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
1 – 5lb. duck, rinsed and drained
4 slices applewood smoked bacon

 

Preheat oven to 325°F.

In a large bowl, mix together all ingredients, except for the duck and bacon, and 1/2 cup of the water. If too dry, add additional 1/2 cup water. Stuff dressing in duck cavity. Wrap duck in bacon strips, holding them in place with toothpicks.

Place duck in a roasting pan. Roast uncovered, for about 1½ hours, until duck is golden and cooked inside. Let sit 10 minutes before removing stuffing and carving.
