Who thought reduced calorie pumpkin bread could be so good? Well, I'm hear to tell you it is. Aren't you lucky? Anyway, my bestie's mama, Sharon (Hi Sharon!) tweaked up a recipe and came up with this little gem (I tweaked it a tad bit more as well). Anyway, it's moist, it's pumpkin-ee and a perfect fix with coffee.
So here's the thing, I was looking at nutritional information for regular, full-calorie pumpkin bread and it averages about 179 calories per slice. Now, they consider one slice to be 1 ounce in terms of weight. I can tell you right now that no one ever cuts a 1 ounce slice of pumpkin bread and considers that a serving. It's minuscule and definitely wouldn't hold a slab of butter. This means that a regular slice, one that you would just normally cut and looks like "normal size" weighs about 2.4 ounces (based on a 12 serving loaf made in an 8 x 4 pan). So one slice of regular pumpkin bread is about 429 calories. OUCH!
So this lovely recipe will cut your calories in half, coming in at only 228 calories per 2.4 ounce slice. That's a huge savings. Now, since you are saving so many calories, you can slather on the butter..he-he. Or cream cheese, or...or...

When Life Hands You Dented Apples, Make Apple Sauce
My local market recently had a sale on apples. I spent 10 minutes carefully selecting the most perfectly shaped, shiny Macs, Rome Beauties, and Pink Ladies I could find.
I gently placed my bags of apples on the conveyor belt at the checkout. As I continued to unload my remaining groceries, from the corner of my eye I saw my apples disappear from the belt: blam! onto the scale, then blam! into the grocery bag. Before I could utter a word, it was too late. My previously pristine apples were irrevocably spotted with unsightly blemishes.
Rather than trying to eat around the bruises, I did what any resourceful cook would do: I made apple sauce.
Brown Sugar-Glazed Grilled Plums
Plump, sweet, and juicy—these are the best-tasting plums. Late summer brings with it all the different types of plums—colors of white, black, red and shapes of round and oval. There are too many varieties to list here. And don't forget pluots, a cross between plums and apricots. I love to eat them fresh—and you know they're good when the juices run down your arm. But as you've seen by reading here, I also adore plums in simple, homey desserts.
Instead of the typical preparation, these plums are grilled. Grilling fruit is not a typical technique, but it's great for bringing out the flavor of fruit, especially when it's a bit underripe. Imagine pineapple slices, peaches, or nectarines on the grill. These fruits nicely caramelize, especially when they're brushed with a sugar mixture. And what goes better with warm fruit than ice cream? This is a dessert to savor spoonful by spoonful.
With just three ingredients, this recipe is almost a nonrecipe. Brush the plum halves with a mixture of sugar and butter that caramelizes on the grill. Serve with ice cream, like my lavender-crème fraîche ice cream, which lends a unique flavor to the dessert. Take the opportunity to grill some fruit before summer ends!
Cream of Celeriac Soup with Herbed Crostini
Oft unknown and underutilized, celeriac or celery root is a vegetable with white flesh and knobby light-brown skin. Its texture is not far from parsnips. Its flavor is like celery: fresh, bright, and almost citrusy. In fact they are related. The celery root grows green stems and leaves above the soil surface that look much like celery and can be used just like celery. The greens have a more pronounced celery flavor but the stems are woody and hollow like bamboo. The herb lovage, another celery cousin, is like this too. The stems can be used as straws in mixed drinks like the Bloody Mary or my take on the Tom Collins.
One of the most common recipes for celeriac, especially in French cuisine is céleri rémoulade, which is a slaw of mandolined or julienned celeriac dressed in rémoulade, a mayonnaise-type sauce. You will also find celeriac prepared as creamy soups or puréed side dishes that resemble mashed potatoes. Though I love céleri rémoulade, since it is now fall, I chose to prepare a classic rendition of cream of celeriac soup. The accompanying recipe for herbed crostini makes a nice complement. Serve the soup as a start to an elegant holiday dinner. The celery flavor awakens the palate in preparation for more food to come.
Apple Slab Pie
Raise your hand if you have an over abundance of apples right now. I thought so! There are many things I want to do with my apples; make apple challah, apple sauce, apple cake, and an apple slab pie. Well, 1 out of 4 isn’t so bad now, is it?
This past summer I made a cherry slab pie and it was so good. I shared it with my friends and, without tooting my own horn, we are still talking about it. So, why not an apple slab pie? The pastry from the cherry slab pie was near perfect. I made another batch of the dough and then simply switched out the fruit. Apples cook differently than cherries, so I adapted the filling from a recipe from The Cook’s Country Cookbook.
Slab pies are great for a crowd. And this pie fed a huge crowd. It was demolished in about 15 minutes. I had one teeny tiny bite. That teeny tiny bite was really good. ;I am going to make this many times over throughout out the next few months. Next time I will pair my apples with some fresh pomegranate seeds!
