This twist on the classic American salad makes for a great sandwich that uses your leftover turkey during the Holidays, or leave out the cranberries for a tasty lunch on a regular day.
this is also a lot like the great turkey sandwich they make at Marmalade on sourdough, but they add sliced tomatoes and leave off the walnuts and apples, which holds up well because of the thickness of the bread and the fresh roasted turkey and is great for take-out on a long airplane ride....
Serves 4
12 oz Sliced Turkey
2 Tbsp Walnut Pieces
1 ½ Tbsp Dried Cranberries or Whole Canned Berries
1 Granny Smith or other kind of Tart Apple
2 Ribs of Celery
¼ Cup Mayonnaise
8 Slices of White bread
Romaine lettuce leaves
Chop walnuts and stir into mayonnaise
Add canned cranberries to mayonnaise
Halve and core Unpeeled Apple and slice thinly
Slice celery stalks thinly with long diagonal cuts
Spread Walnut/Cranberry Mayonnaise on a slice of bread
Add a layer of celery, a layer of turkey and a layer of apple.
Top with lettuce if desired and top with 2nd slice of bread
