An excellent sandwich incorporating a spicy mayonnaise to use up that leftover Holiday Turkey, but it's good on any day!
Serves 4
¼ C. Mayonnaise
1 Tsp Caraway Seeds
¼ tsp Turmeric
½ C. Whole Cranberry Sauce
½ – ¾lb Sliced Turkey
Red Leaf or Butter Lettuce Leaves
1 loaf of Good Bread or a Ciabatta of your choice, sliced
Crush the Caraway Seeds with a mortar or finely chop them
Combine them with the Turmeric and Mayonnaise and Refrigerate for at least 2 hours
Press the Cranberry Sauce Firmly through a sieve to remove skins
To assemble:
Spread each slice of Bread with the Mayonnaise Mixture
Add a Layer of Lettuce, a Layer of Turkey and Top with the Cranberry Sauce
Press top bread firmly on Sandwich
Slice in Half
