Chicory Salad with Walnuts and Goat Cheese

1/2 cup walnuts
3 tablespoons grapeseed oil
1/4 cup soft goat cheese
1 tablespoon juice from fresh lemon
2 tablespoons water
a crisp red gala apple (a green apple works, too)
5 cups chicory chopped

(You can make this salad with watercress instead of chicory, too)

Cook walnuts in grapeseed oil until lightly browned in a skillet.

In a bowl, mix together with a whisk, lemon juice, water, goat cheese, and a tiny bit of black pepper to taste.

Slice apple thinly and then chop each slice in half.

In a salad bowl, add chopped chicory, toss walnuts on top, then apple, then mix with the goat cheese mixture.
