bolognese-sauceTortellini has been a part of our family’s Christmas day repast since our kids were … well, since they were kids. We used to make tortellini in brodo, a Northern Italian Christmas tradition. I would make a chicken, beef-bone and vegetable broth on Christmas Eve and then on the day we’d all pitch in to make sheets of fresh pasta and a meaty, cheesy, herby filling out of which we’d fashion hundreds of little belly-button-shaped beauties to float in the rich steaming broth. At the table we’d grate Parmigiano over the top and count our holiday blessings.

One year instead of broth I served the tortellini in a bolognese sauce and it was such a hit we haven’t been back to broth since. I use Marcella Hazan’s classic recipe for the meat sauce and I follow it to the letter because it’s quite perfect. Well, in truth, I add a bit more onion than she calls for. I’m a whore for onions. I tripled the recipe this year because I knew once I tasted it I would want to have more in the fridge for later. This is where the trouble started.

There’s something supremely satisfying about Marcella’s bolognese. Bubbling a cup or two of milk through the meat before adding the tomatoes creams up the sauce and sweetens it. And the five-hour simmer patiently breaks down the components and gives them time to take advantage of each other. It’s a meat sauce to dream about and this year’s version was no exception. The kids and I scarfed down our beefily-sauced tortellini while Jill tucked into her lentils with vegan gusto. Ah, chacon à son goût.

ihop1The first article I ever wrote for One for the Table was about how I came to love IHOP as a child, abandoned it as I got older, and rediscovered it much later. I’m still bereft that they took my beloved corn meal pancakes off the menu a few years ago, but when I got an email recently about their All-You-Can-Eat-Pancakes promotion from January 2nd to February 9th, I headed over to that iconic blue roof in Encino.

I did not intend to eat all I could, nor even the 10 pancakes required to compete in the Player Standings. Thankfully, that means that I will not be eligible to win free pancakes for a year. So rather than ordering the buttermilk pancakes required for having my plate refilled again and again, I decided to try two meals I’d never had before. (I ate less than half of each…honest.) First, I ordered the strawberry-banana pancakes, which were spoiled by the goopy, faux strawberry-flavor glaze. Then I got a Belgian waffle, which was perfect - crispy, light and delicious.

If the 39 days of the All-You-Can-Eat-Pancakes season aren’t enough to keep you satisfied, this year IHOP has upped the ante by introducing the first IHOP Pancake Bowl, in which the top 10 high-scorers in the Player Standings from each participating region will compete locally during Super Bowl weekend to see who can eat the most pancakes. He who wins (could a “she” possibly win?) will get a $500 IHOP gift card.

chickenhashEvery Sunday I roast a few chicken breasts (bone in, skin on). It’s easy. Having shredded chicken in the kitchen at all times prevents me from randomly eating empty calories during the week. Plus, having pre-cooked, roasted chicken on hand, gives me lots of inspiration for one pot meals.

Generally, I don’t really like leftovers. With that said, I always make enough food for dinner so M can take lunch to work with him the next day and the kids have something healthy to put in their lunch box. Yet, by the time Thursday rolls around, even though I have “planned” a particular meal for that night (yes, I do meal plan every single week), sometimes it is hard to motivate. Whipping up a meal in less than 2o minutes is sometimes much more desirable than what was supposed to be on the table that night and this leftover hash was created on one of those nights.

Left over roasted potatoes, shredded chicken, half of a red pepper, a few leeks, additional random veggies, and some spices, created one of our new favorites; Chicken-Potato Hash. It is equally delish with or without the poached egg. Eli and I prefered it with the egg, where as Isaac cannot sit next to us when eggs are on the menu. Instead, he added a bit of ketchup. This also makes a wonderful and highly requested Sunday morning breakfast. Sausage works just as well and I have been known to a throw in some left over green beans, roasted carrots (or other roots), and a dollop of goat cheese.

raspcoffeecakeI don't think I have to convince anyone how good coffee cake always seems to taste. Whether you eat it in the morning with coffee or in the afternoon with hot tea....it's just always so dang good!  This recipe is no exception. It was our little treat today.

Anytime I'm at Costco and they have great looking berries, I grab them and throw them in the freezer for when inspiration hits.  Why buy a coffee cake when they are so easy to make? I threw this one together while I was getting the boy's breakfasts made and making their lunches for school.  I am the ultimate multitasker.

Anyway, next time you see some beautiful raspberries, pick them up and give this a whirl. No mixer needed!

blueberryscones.jpgI love scones, but I don't enjoy making them. There I said it.  Kneading the dough, shaping it...maybe that sounds lazy but right now life is busy with no extra time for little things like, kneading and shaping dough.

That's what I love about these scones, you gently stir the batter together, mounding up each scone individually. So easy!

However, the trick with scones remains; over-handling the batter will make them tough. Mixing must be kept to a minimum for optimum results.

These scones were quite toothsome with their mix of blueberries, cornmeal and lime zest. Lime juice was also added to the glaze to really bring home and incorporate the flavors at play.

Overall, a lovely, easy breakfast to enjoy. Not overly sweet and perfect with coffee or tea.
