
Sweet Potato Pie
3 sweet potatoes
2 eggs
1/4 cup light brown sugar
1/4 cup white sugar
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cardamon (optional)
1/2 teaspoon vanilla
1 cup whole milk
9" prepared pie crust
Boil sweet potatoes in skin, let cool, and peel. In a large bowl, mash sweet potatoes with butter and half the milk. In a separate bowl, beat eggs, then add them in. Add sugar, vanilla, and spices and rest of milk and beat until smooth and well-mixed. until smooth.
Pour into unbaked 9" crust, bake at 400°F for ten minutes, then lower heat to 350°F and bake for another 40 minutes or until a toothpick comes out relatively clean.
