Spiced Apple Walnut Muffins

2 large eggs, beaten
3/4 cup sugar
1 1/2 cups grated apple, about 2-3 medium
2 tablespoons orange juice
1 cup unbleached all purpose flour
½ cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly ground nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon salt
5 tablespoons butter, melted and cooled about 5 minutes
1/2 cup toasted walnuts, chopped

Adjust oven rack to center position and preheat to 400°F. Line a standard 12-muffin pan with papers and set aside.

Whisk eggs and sugar together in a large bowl. Stir in grated apples and orange juice and let stand for 10 minutes to allow apples to render their juices.

Meanwhile, whisk together the dry ingredients in medium bowl and set aside.

Stir in the melted butter and nuts into apple mixture. Fold in the flour mixture and stir just until blended – do not overmix. Divide batter among 12 greased or lined muffin tins. Bake at 400 degrees for 14 to 16 minutes, until a toothpick comes out clean. Let cool for 2-3 minutes and then transfer to wire rack.
