Denver Omelette

Chop a quarter of an onion and half a green pepper into pretty fine pieces.

Melt butter into an small frying or omelette pan and add onions and peppers  Cook until al dente.
Being careful not to brown the butter.

Mix three eggs in a bowl with a whisk.  Adding a lot of air.

Pour eggs over onion and pepper mixture.  Cook as you would an omelette, lifting the sides with a spatula and tilting the pan to let the egg run over so it cooks through.  

When the omelette is almost done, add a quarter of a cup of chopped ham and a few slices of swiss cheese.  

Cook until cheese melts.  Fold over and serve with buttered whole wheat toast and fresh orange juice (just to give the appearance of a healthy breakfast.)
