Easy Duck

Turn the oven on to 375°F

Pour a little fresh orange juice and olive oil and salt and pepper on a well washed duck in a roasting pan.

Roast for an hour and a half or longer until the leg wiggles.

Prick it with a fork every fifteen minute or so and baste.

Serve with wild rice, any seasonal green vegetable, and apple sauce.

And an excellent red wine.
