A head of romaine lettuce
A small wedge of mozzarella cheese
A great Italian salami
(optional: black olives, artichoke hearts)
(for a healthier salad, substitute fresh roast chicken for salami)
Chop everything with a knife, into small pieces, the salami, the lettuce, the cheese, the tomatoes, the cucumber, leave chick peas whole.
Toss in a big salad bowl.
Serve with a red wine vinegar vinaigrette:
Two parts olive oil, one part red wine vinegar, a half tsp Dijon mustard, dried basil, salt and pepper.
Pour dressing over salad and mix well.
