
Harvest Apple Cake
2 cups coarsely grated apples
1 cup sugar
1 egg
¼ cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
1 cup pecans
1 teaspoon vanilla
Combine apples and sugar in a bowl. Beat egg and oil together and add to apples. Combine dry ingredients and add to apple mixture. Mix well. Stir in pecans and vanilla. Pour batter into a greased 8-inch square baking pan and cook in a 350° F oven for 40 to 45 minutes. Serve with ice cream or vanilla sauce.
YIELD: 8 servings.
