This combination may seem slightly odd, but is a refreshing summer salad that blends the sweet and savory aspects just perfectly.
1 cup watermelon, chopped into 1/2 dice
1/2 cup crumbled feta
2 tablespoons chopped mint
4 cups mixed baby greens with arugula
3 tablespoons balsalmic vinegar
1½ tablespoons extra virgin olive oil
Fresh ground pepper
Pinch of salt
In a medium size bowl, mix the vinegar, oil, salt and pepper to taste with a whisk. Add baby greens and mint and toss to coat. Add more pepper if needed.
Place equal amounts of greens on two salad plates. Add 1/2 cup watermelon on top of each plate of greens, than sprinkle each with half of the feta. Drizzle each with more balsalmic, if desired.
